<p>Emulsionate in una terrina l&#8217;olio e l&#8217;aceto. Aggiungete il sale, il pepe, la senape e lo zucchero. Schiacciate il roquefort lavorandolo bene, quindi unitelo alla salsa mescolando energicamente, in modo da ottenere un composto omogeneo. Unite il sedano mondato e tagliato a tocchetti.<br />Lavate il cicorino verde e tagliatelo a striscioline sottili, tenendo da parte alcune foglie intere; lavate e asciugate la lattuga romana, tagliandola anch&#8217;essa a striscioline.</p></div>

Solo al momento di servire in tavola condite con la salsa al roquefort, aggiungendovi anche il succo di limone e il tabasco.<br />Eventualmente, qualche foglia di insalata selvatica, tipo dente di leone, aggiungerà una nota amara al sapore.</p></div>

<p>Mondate e lavate la lattuga, staccate le foglie e disponetele in una insalatiera.<br />Lavate accuratamente gli spinaci e asciugateli, scegliete le foglie più tenere e mettetele nell&#8217;insalatiera.<br />Mondate, lavate e asciugate la cicoria, tagliatela a metà per il lungo e poi riducetela a listarelle sottili, da unire alle altre verdure.</p></div>

<p>Immergete ripetutamente il cespo di indivia riccia in una ciotola d&#8217;acqua fredda, cambiando spesso l&#8217;acqua. Scuotetelo bene, staccatene le foglie, spezzettatele e tenetele da parte.<br /> Spezzettate e lavate bene anche l&#8217;indivia belga e la lattuga. Eliminate le foglie sciupate dai cespi di cicoria, staccate le rimanenti e lavatele accuratamente una ad una.<br />Asciugate tutto accuratamente con una centrifuga, un panno pulito o carta assorbente. Poi sistemate i vegetali in un sacchetto per alimenti e riponetelo in frigorifero.</p></div>

				<div class="et_pb_text_inner"><p>Preparate il condimento: stemperate il sale e il pepe in 4 cucchiai di aceto bianco, unite l&#8217;olio emulsionando bene.<br />Pochi minuti prima di servire, in un&#8217;ampia terrina unite il condimento ai vegetali. Mescolate delicatamente ma uniformemente, poi trasferite il tutto in un&#8217;insalatiera, così da lasciare nella terrina in condimento in eccesso.<br />Se non servite immediatamente, coprite con pellicola e tenete in frigorifero.</p></div>
